Easy peasy, except there's no Naked Chef in my kitchen

Another super easy "why are you blogging this?" meal tonite. My uncle's in town to visit so I wanted a quick dinner. Kamut udon noodles (my new favourite!) tossed with Sneaky Tomato Sauce (Vegan Lunchbox) into which I mixed in some ground round and cheddar "cheese". I also threw in a handful of spinach during the last few minutes of the pasta's cooking time. Yum, so delicious, and ridiculously easy, since I had frozen the sauce and just needed to thaw it today. The sauce with the ground round reminds me of the sphagetti sauce my dad used to make :)













We got a chance to check out the new Superstore, which is still in progress, but there's lots of great new stuff. There's a whole side of a display fridge for veg stuff. I got chicken ground round! Now I just have to figure out something cool to do with it. They've also majorly expanded their organic section of produce....yay, I'm so excited! No vegan cheese though, they just started stocking another casein soy cheese :(

I love those kamut/udon noodles too - and the kamut/soba. Don't they cook up fabulously? Not sticky or anything - and then they taste wonderful, and are very digestible. Your post has reminded me to pick up some more! :)

Vivacious...as much I love being in the kitchen, sometimes there's better things to be done!

Dreena, I know! They don't stick at all, and they've got a great texture. I think they're going to replace regular whole wheat spaghetti in my pantry. Plus there's 5 grams of fiber and 15 grams of protein, with iron, in a serving :)

I've never tried kamut noodles of any sort, but you have really tempted me to seek them out.

Also, what is Superstore? Is it a Canadian store?

I'm a big fan of blogging the "Why are you blogging this?" stuff. It's all about making a vegan lifestyle look attainable. And, after all, all of our meals don't come straight from a cookbook, right?

Way to go. The spaghetti looks yummy!

Yes, Bazu. Its a Canadian chain of grocery stores that are competing with Wal-Mart (they've got photo developing, general merchandise, clothes, etc.)If you've ever heard of the Presiden'ts Choice or No Name brands, they own them.

Vegandoc, its actually cuz of you that I blog this stuff now, I read your earlier post, and its true, you have to show that its attainable. That is, if any non-veg*n's happen upon this site :)

Kamut noodles - those sound great! I will definitely need to look for these, but unfortunately, there is a severe lack of variety in the noodles at my local Whole Foods. I thought I'd be able to find anything foodwise here in Chicago, but boy was I wrong!
