Not much new food to post, things have been crazy. I made the eggplant parmesan from La Dolce Vegan. It was good. I don't think I'd make it regularly since it took a while, but the eggplant was melt-in-your-mouth.
I made mint chocolate fudge and peanut butter fudge as a host gift for my uncle, no pictures, but its yummy!
We're leaving tomorrow for Christmas in Mattawa/Deep River/Ottawa (lots of driving!) and we'll be back on the 28th....so happy holidays to everyone! Be safe and have fun.
