Chili spuds

Lunch this week is Chili con Carne with a baked potato, pineapple-banana fruit salad, and salad, all from Vegan Lunch Box. The chili was made in the slowcooker overnight, so lunch was ready in the morning. Its probably the cheapest chili I've made, since I got the dried beans, lentils and TVP all in bulk for 2 bucks or so. Its a good chili, but it could use some chili powder. I love it in combination with the baked potato. Today, I topped it with a bit of "cheddar" cheese. The fruit is topped with a bit of agave nectar and some walnuts. The salad is a simple tossed salad with Asian Miracle Dressing, which I'm not a huge fan of. Next time, I'll use less sesame oil.
All in all, a very satisfying and filling lunch! Oh yes, and I found some frozen chocolate chip cookies today for dessert...sweet!

Chili topped potato - I have been hankering this for several days now, my next gift request is the lunchbox cookbook.

Do you ever heat your plastic trays in the microwave? I thought about it today, but then just ate my soup and sweet potato cold. It actually wasn't to bad.

Dori, no I don't. I also bought the thermos, so anything that needs to be hot goes in there. And I like veggies at room temperature, so its not a big deal. I think they're microwave safe though.

Ooh chili sounds good right about now.. it's so cooold outside. Gee.. I wonder if I would be allowed to have a slow cooker in my dorm room! Haha.

Dumb question about these Bento boxes I see everywhere...can you carry it and everything stays in it's little compartment?

Sarah, yes pretty much. One of the larger containers has a lid for wetter foods, but the lid of the box is pretty snug against the containers. I've had salads and fruits and such in them, and they stay where they belong. Sometimes I cover the containers with a bit of saran wrap to be safe.

and did your bananas turn brown? or did the pineapple's acidity prevent that?

Nope, the pineapple stopped that :) They get a bit mushy but its a nice contrast to the pineapple.

That's my favourite way to eat chili, piled on top of a big, steamy baked potato! Yum yum, perfect Ontario winter food, no?
