This is post 250 for my blog! And it only took a couple of years to go from 200 to 250...slacker!
I don't have anything too exciting to celebrate but lunch today was fantastic.
The cookbook Quick and Easy Vegan Comfort Foods makes meal suggestions to pair things together and I made a Japanese inspired meal.
Teriyaki Rice Bowl
Very simple and tasty. Jasmine rice with steamed carrots, broccoli and green beans, topped with a homemade teriyaki sauce and pan fried tofu cubes. Billy likes it too, so two thumbs up. Also, very filling, I think it makes 4 servings, not two like the book says.
Vegetable Tempura
I made this one as an afterthought, after we did groceries, so I didn't have shiitake mushrooms or green beans, but I used yam, broccoli and carrot..............so delicious. I adore tempura. And it's just like the one you order in a sushi restaurant.
We just got back from a 5 day trip to visit the in-laws, so there was not much cooking. I was pleasantly surprised to arrive and find that mom-in-law had made her delicious vegan chili for dinner......so good! The rest of the trip was mostly burgers, hot dogs, and pasta.

Yay for 250! And yay for your mother-in-law's chili, that's really nice. :-)And I also love tempura - do you need a lot of oil for that? Because I really don't like cooking with a lot of oil...
C, for this tempura, it was fried. I used about an inch and a half of canola oil in big pot. You could always try lightly frying them in a pan, but I don't know what the result would be.
Of course, I drained the veggies on paper towel before eating though.
