Could it be any easier?

As promised, the roasted cherry tomato pasta from La Dolce Vegan. I sent Billy out with my grocery list today, as I had to work on my Roman Civilization midterm. This is the easiest recipe ever! Toss some tomatoes with a bread crumb mixture, stick in oven, make some pasta, and stir it all together with some basil. And it is heavenly!! This is one of my favourite recipes from LDV to date! I had to use grape tomatoes, Billy couldn't find cherry tomatoes, but it doesn't matter. Oh and opal basil because they didn't have the regular kind. I'm thinking I'll be eating the leftovers later tonite, its just so beautifully yummy! It was great to be able to throw this together so quickly. I'm only about halfway through my midterm, so I'll be up pretty late tonite after work.

I've never seen anything like that pasta before. Looks really good and easy. It makes me want to get LDV. Good luck with midterms. They are a bitch.

Sarchan, I highly recommend any of Sarah Kramer's cookbooks! The food rocks. Its because of the Garden of Vegan that I'm still vegan today :)

Michelle I can't wait to try out the roasted tomato pasta (The ones that call for olives)!

Inspired by your blog yesterday I made this pasta for dinner today. Oh my god, it was soooo good. My boyfriend and I both loved it. I can't believe I haven't tried this sooner.

P.S. not the same Michelle as above :)

This is also one of my favorites from LDV. And my husband likes this so much, he requests it. It's divine!
