~Tis the season~

For Noel Nog.....woot! No one had it here last year, I searched, believe me...so imagine my excitement when I was in the health store yesterday with Billy and I saw it in the fridge! You should've seen Billy's face as I piled the Nog into his waiting arms, haha. Now, as good as it is to drink, its great to bake with too! Enter Wolffie's Eggnog Muffins from La Dolce Vegan. I'd made them before, but with homemade eggnog, and they just did not frost my cookies. So I tried them again and they came out great. A little browned on the top, but fluffy on the inside. They taste like eggnog, plain and simple. They're a little plain according to Billy, but they showcase the greatness of the Noel Nog, with some nutmeg and ginger thrown in.




























I made the portabello mushroom bake from Garden of Vegan fame last night for dinner. Considering how delicious it is, it really is simple to make. Blend up the sauce, pour on the mushrooms and onions and bake, 25 minutes later, you've got yourself dinner. I ate mine over some brown rice. I have avoided making brown rice lately, because without my steamer, I just can't seem to get the perfect rice anymore, its always wet and mushy. I followed some tips from Berna at the GoVegan forum, and the rice was perfect for once. Thanks Berna! I surrender Joaquin to you for your ability to make great rice!

I tried the portobello mushroom bake and there was something about it that just didn't taste quite right. I'm not sure but I don't know if I'll have the courage to make it again.

Over here, we have the Vitasoy Hollynog, and we have gone through an embarassing number of boxes in the last few weeks. I loves me some nog! Those cupcakes look like the logical next step. Does the frosting have nog too?

Bazu I didn't make any icing...although you could probably make a regular vanilla icing and use the nog instead of the soymilk....mmmm so good!

vivacious, that's too bad, but different strokes for different folks :) I had to make a few "I didn't do any groceries" substitutions so it wasn't as great as usual.

I'm definitely making those muffins - I've never made anything with my Noel Nog before, so this seems like a great idea!

Sarah, I found the flavour got better over the next two days too, so try and save some (I had a hard time saving one for lunch tomorrow!)

oops my bad- I actually thought the first picture showed frosting! nevermind!
