Yummy Treats

I thought I had retired my lunchbox til the New Year, but Billy and I decided to go to school on Saturday to study for our exams that night. In the thermos is How It All Vegan's Lively Lentil Stew. Yum, very satisfying in this weather! Especially since I had the chills all day (probably nerves).













I also started some holiday baking. Pumpkin cranberry cookies from La Dolce Vegan, and also from LDV, mint chocolate fudge.













The pumpkin cookies gave me a hard time. I forgot to preheat the oven, and I had poured some of the liquid into the batter, so I'm not sure if that would affect it, but these did not cook in the given time, or anytime soon after that! So the bottoms were overly cooked and the insides slightly undercooked. But they still taste good, with pumpkin pie spices, pecans and cranberries. I'm a fan of cranberries in baked goods, they get nice and chewy.

The fudge is out of this world good. I'm scared to make it again, I'll eat it all. I needed to use a candy thermometre, since I don't know anything about "softball stage" and all that...but it was relatively easy. LDV has other variations on fudge that I'm going to have to try in the coming weeks.

Ooh, that fudge looks delicious, I've got LDV so I might have to try it out soon because I love fudge but since going vegan the 2 times I've tried to make it, it hasn't set.

The fudge looks so good, but I know what you mean about not wanting to make it because you'll eat it all. That is why I haven't done any holiday baking this year. But I guess that's what boyfriends are for!

Ooo that fudge looks marvelous. I'm glad I'm not a big chocolate fudge fan, or I'd be making it..now. I was more of hideously sweet white chocolate and peanut butter fudge fan. Oh man.

Your food looks great! The fudge does too, but candy thermometer recipes scare me too much since it seems to exact and I could see myself totally screwing something up.

As I was reading your blog, I thought back to my days as a student and how I'd so ANYTHING else instead of studying. I never had so much baked goods, a clean house, and well-manicured nails like when I was studying!

Both the cookies and fudge are calling out my name. They look delicious! I have eaten far too many sweets though in the past month and am going to try to limit myself.
