Forgiving but not forgetting

I'm starting to forgive Candle Cafe for its not-so-great tofu scramble. These lemon poppy seed muffins are delish. I asked Billy while I was baking them if he liked lemon poppy seed muffins in general, and he said "not really". That's funny...he ate 3 for supper last night! These are nice and light with a crunch from the seeds. A perfect breakfast with a smoothie.


Dinner tonite was courtesy of CalciYum! Hearty soybean burgers. I don't make my own burgers very often, just because I have the idea that they are time consuming and tedious. These did take some time, but with a little coordination, or even planning ahead, they could be made quickly. I did cook soybeans in my slowcooker for them, since I couldn't find any canned. Aside from the soybeans, these also have potato, carrot, celery, onion, ground almonds, tofu, bread crumbs, a nice touch of mustard and some seasonings. I love that they're baked and not fried, and they even hold up together pretty well. And...they have 24% of your daily calcium! I liked the flavour of these and I think I'll freeze some for later use.


Lunch this week, as I mentioned is lentil rice balls with pasta and tomato sauce from Vegan Lunchbox. I couldn't find any pomegranates like the menu suggested so I went with kiwi. And of course a square of dark orange chocolate. The author suggests packing the balls separate from the pasta until lunch or they'll get soggy. I find that they get harder when they're reheated so today I packed it with the pasta, and they were just right. I didn't get the greatest picture from yesterday but it'll do. I know you can all visualize it easily enough, I just like providing pictures :)

Billy sounds a bit like my bf, saying he doesn't like something and then eating double! I guess when it comes right down to it, sometimes we don't know what we like, because we get ideas in our head about something before even trying it. Just like me and fennel; a few months (one batch of Moroccan Chickpea Patties later) we're close friends. You just never know.

Raising kahne, I actually used dijon since I forgot to buy brown mustard, it smelled really strong but it was still good. I don't know much about the differences between vinegars, but I'm sure Red Wine could do in a pinch. You should get some balsamic next time you're shopping though, its great!

Yum! Why, oh why, have I never tried baking my own poppy seed muffins? THey really do look like the perfect breakfast. I love baking the night before and waking up knowing there's an interesting breakfast waiting for me!

Muffin looks spectacular. So does the burger. I know what you mean about it being a rather tedious affair. If I get adventurous and decide to make my own burgers, I usually do it in stages over a day or so, otherwise it seems to take hours. And lentil rice balls! Mmmm! I love the tofu balls from LDV. Have you tried those?

carrie, I have made the tofu balls from LDV, and I prefer them over the lentil balls. But they're a nice change.

Wow, I remember making those soybean burgers from Calciyum years ago, and I now recall how I thought they were tasty! You've inspired me to dust off this cookbook! Thanks!

I love lemon poppy seed muffins! I've been wanting to make some for awhile, but it's the strangest thing - I can't find poppy seeds at Whole Foods! You'd think they would carry everything, but no. Anyway, I love making my own bean burgers. I think they taste better than any you can buy pre-made. The one you made looks delish! And your lunches always look so cute. :)
