Vive la France!

Lunch today (and for the rest of the week) is what I wish I could've eaten in France when I went, but good luck finding a vegan place. Ham and cheese croissants with French-style green beans. The whole-wheat croissants from Vegan Lunchbox are delicious; time consuming but delicious. They're so much better than Pillsbury, plus you know exactly what goes into it. I wish I could've eaten one straight out of the oven last night at midnight, but I resisted. They're not hard to make, there's just a lot of waiting time (rising, refrigerating, etc.). I made the sandwich using Tofurkey deli slices and a slice of Tofutti cheese. If you don't like knowing nutritional info, stop reading here! The recipe makes 16 fairly small croissants, but they're each roughly 175 calories...darn that Earth Balance, haha. I don't worry about that stuff too much though, I ate the foods I wanted in moderation last month and lost ten pounds.



I made the Mushroom Risotto from Candle Cafe yesterday, which I was so anxious about. Whenever I watch Hell's Kitchen, it seems that Chef Ramsey really rags on the contestants about the quality of their risotto, so I was scared that it wouldn't turn out. But it did! And it was delicious! I meant to throw in some PC chicken strips for protein and forgot, but it was still yummy.




The risotto left me with almost a full bottle of dealcoholized white wine though, so I'll be making something else from Candle Cafe in a few days to use it up.

The little croissant sandwiches look great. And yeah, they're high in calories and fat, but some things are just worth it, right? Congrats on the 10lb loss, by the way.

I've made risotto before, and it's not nearly as hard as everyone makes it out to be. Lots of stirring, but that's it. I think Gordon Ramsey just likes picking on people, and he's jealous because even the ugliest person in the world is still better looking than him.

LOL I almost choked on my food reading that last bit. You're right, it wasn't hard, you just have to be diligent.
And the croissants were totally worth it, and fit into my calorie range for the day, so why not? The only thing deprivation gets me is extra weight!

Everything looks particularly yummy today, you can tell you had a long day in the kitchen! Love those croissants, I'm going to have to bite the bullet and make some!

Wow way to go losing ten pounds! I have trouble with moderation - I guess it's kind of all or nothing with me, so I envy your ability to still include the foods you like without overdoing it.

I've been wanting to make the croissants, but I kind of despise rolling out dough. Your sandwich looks great!

kati, its only been a month, so we'll see how long that lasts. I'm still avoiding baking cookies or anything like that, because I know it will make it really hard to resist!

The croissants look gorgeous! I wish I had the patience to make them. And the risotto looks really good, nice and creamy.

Oh la la- I've been wanting to make those vegan lunchbox croissants for over a year now, ever since seeing them on the blog. I have got to make them and make ham + cheese like you!
